  1. Place grated cucumber in a fine mesh strainer over a bowl or the sink and let drain for about 45 minutes.
  2. Stir together all of the ingredients in a medium bowl. Refrigerate until ready to use.
Recipe Notes

If your cucumber is organic, there’s no reason to peel it. And the color of the peel looks nice in the tzatziki.
